Omelette

This is a great way to get children eating eggs. Omelette made this way tastes really good and the kids love helping. It’s also great as camping food.

Various fillings: chopped tomato, onion, mushrooms, ham, sausages, bacon bits, peppers, grated cheese, fish etc.
2 eggs per child
a drop of milk

  1. Start by chopping up some bits and pieces for the filling and placing them in bowls/containers. Older children can help with this.
  2. Give each child a seal-able freezer bag (medium sized ziplock ones are really good!). Then let each child break two eggs each into their bag. Don’t whisk it or anything, shut the bag and let the kids gently shake them or squeeze them. Then add a tiny bit of milk (optional)
  3. Once the yolks have broken up and mixed a bit, the kids add whatever they like from the bowls.
  4. Then squeeze the bags to remove air, seal them by tying in a knot or using the ziplock. You can label the bags so they don’t get mixed up.
  5. Then put the bags in a large pan of boiling water and cook for about 10-15 mins (you will know its ready when all the liquid has disappeared).
  6. Open the bag carefully (mind the steam) and serve

Yogurt cake

The easiest cake in the world! Une recette pour Gâteau au Yaourt is a found in almost every French kitchen. Very easy to make, it is enjoyed by the young, the old, and everyone in between. The key to its simplicity is to use a Yoplait tub of yogurt as the measure for the rest of the ingredients. What Mum and kids like most about it is that kids can make it almost entirely on their own.

Ingredients

2 tubs of plain yogurt (125 ml each, like the standard Yoplait ones)
2 tubs sugar
1/2 tub vegetable oil
3 tubs sifted flour
1 Tablespoon baking powder
3 eggs

Preheat oven to 350º (180º C)

Generously grease and flour a cake pan.

In a large mixing bowl, combine the yogurt, the oil and the sugar with a wooden spoon.
Add the eggs, one at a time, stirring well after each addition.
In a medium bowl, whisk together the flour and baking powder.
Add the flour mixture to the batter in 3 or 4 additions, stirring until just combined.
Pour the batter into the cake pan.
Bake for 50 - 60 minutes, until the top springs back from a light touch or a toothpick comes out clean.

Remove from oven, place on a cooling rack, and wait at least 10 minutes before depanning.

Dust with powdered sugar if you wish for a little garnish.

The basic recette pour gâteau au yaourt lends itself to many variations. You can add citrus zest or peel for a tasty lemon or orange cake, you can add nuts to the batter, you can slice the baked cake in two and spread a layer of jam in the middle, you can add fresh raspberries or blueberries to the batter etc - whatever strikes your fancy.

Give your kids some pillows, sheets and duvets for them to build tents in their room (or anywhere else!)
